At its core, this dish pairs eggs cooked to your preference — whether fluffy scrambled, sunny side up, or over medium with a slightly runny yolk — with a hearty half-cup of lentils.
Alternatives
Lentils are a slow-carb staple, loaded with fiber, plant protein, and complex carbohydrates that digest slowly and keep blood sugar stable. If lentils aren't your thing, black beans, pinto beans, or black-eyed peas work just as well.
A pinch of salt, black pepper, and a generous spoonful of salsa bring the whole dish to life. A splash of hot sauce takes it over the top.
Refrigeration
Batch-cook this ahead of time and you've got a ready-made breakfast all week — just microwave for one minute (cover the bowl to contain any egg pops) and you're set.
Ingredients
- 3 egg whole without shellseggs
- 1⁄2 cupblack beans
- 1 tablespoonsalsa
- 1 dashsalt
Instructions

Cook eggs in any way you desire - scrambled, sunny side up, etc. I prefer mine over medium with a slightly runny yolk.
