Ingredients
- 2 tbspOil, olive, salad or cooking
- 1 largeOnions, raw
- 2 lbBeef, ground, 80% lean meat / 20% fat, raw
- 16 ozPeppers, bell, green, raw
- 4 clovesGarlic, raw
- 12 ozTomato, paste, canned, without salt added
- 1 can, 15 oz (303 x 406)Corn, sweet, yellow, canned, vacuum pack, regular pack
- 15 ozTomatoes, red, ripe, canned, stewed
- 1 canBeans, pinto, mature seeds, canned, solids and liquids
- 1 1⁄2 cupWater, bottled, generic
- 1 ozPICKLED JALAPENO NACHO SLICES, PICKLED JALAPENO
- 3 tbspSpices, chili powder
- 1⁄2 tspEXTRA HOT RED PEPPER FLAKES, EXTRA HOT
- 3⁄4 tspSalt, table, iodized
- 1⁄2 tspSpices, oregano, dried
- 1⁄2 tspSpices, cumin seed
Instructions

Heat the oil to medium heat. Saute half the onions and garlic for a few minutes until soft and translucent. Keep to a low-medium heat to prevent burning.

Increase heat and add the ground beef. Cook until browned.

Add the chili powder, red pepper flakes, salt, oregano and cumin.

Add the remaining onion and bell pepper. Cook for 5 minutes.

Add the tomato paste, stewed tomatoes, and 1.5 cups of water. Set it to a simmer for 45 minutes.

Add the pinto beans and corn - doing it any earlier will make the beans mushy and will make them fall apart. Simmer for another final 30 minutes.

Mix well and add spices to taste. Enjoy!
